Apple and Peanut Butter Snack Bites

- 1/2 cup peanut butter
- 2 Tbsp. ground flax seed
- 1/4 cup dried cranberries
- 1 cup quick-cooking oats
- 1/2 apple, chopped
- 2 tsp. honey
- 1/8 tsp. salt
- Place peanut butter, flax seed, cranberries, oats, apple, honey and salt in a food processor and pulse until they come together to form a dough-like texture. If mixture is crumbly, add 1 to 2 tablespoons water and pulse until it comes together.
- Scoop mixture into 1-inch balls. Place in an air-tight container with parchment paper between each layer. Store in refrigerator up to one week.
