Cranberry Pomegranate Orzo

Cranberry Pomegranate Orzo is a festive dish for the holidays. Fresh flavors of pomegranate, cranberries and Feta cheese fill this dish.

Cranberry Pomegranate Orzo
  • 1 (12 oz.) box orzo
  • 1/2 cup crumbled Feta cheese
  • 1 pomegranate, seeded
  • 1 cup dried cranberries
  • 1/4 cup olive oil
  • 1/2 cup cranberry juice
  • 1/2 Tbsp. red wine vinegar
  • 1/4 tsp. salt
  • Parsley for garnish
  1. Cook orzo according to package directions. Remove from heat, drain and rinse with cold water. In a large bowl, combine orzo, cheese, pomegranates and cranberries. Set aside.
  2. In a separate mixing bowl, whisk together olive oil, cranberry juice, vinegar and salt. Whisk until combined. Add desired amount of dressing to orzo salad. Refrigerate remaining salad dressing. Toss salad, cover and refrigerate for 20 minutes. Garnish with parsley before serving.
