Pumpkin Bars


Pumpkin Bars are an easy last minute dessert! Most of these ingredients will already be in your pantry.


Pumpkin Bars
  • 2 cups sugar
  • 1 cup oil
  • 4 eggs
  • 3 tsp. vanilla, divided
  • 1 (15 oz.) can pumpkin
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. ground cloves
  • 2 cups flour
  • 2 tsp. baking soda
  • 2 tsp. baking powder
  • 1 (8 oz.) package cream cheese
  • 1/2 stick butter, softened
  • 3 cups powdered sugar
  1. Preheat oven to 350º.
  2. In a large bowl, combine sugar, oil, eggs, 2 teaspoons vanilla, pumpkin, cinnamon and ground cloves. Slowly add in flour, baking soda and baking powder. Mix until combined.
  3. Pour batter into an 18 x 12-inch baking pan. Bake for 30 minutes or until a toothpick inserted comes out clean. Let cool.
  4. In a small bowl, combine cream cheese and butter. Gradually add in powdered sugar and remaining vanilla. Once combined, spread frosting on cooled cake.
