Thai Chicken Salad

Try Thai Chicken Salad for lunch or dinner this week. We are making a homemade dressing to go over top.

Thai Chicken Salad

Ingredients
  • 4 cups chopped cabbage
  • 2 cups chopped red cabbage
  • 2 carrots, grated
  • 4 green onions, thinly sliced
  • 1/4 cup minced cilantro
  • 2 cups cooked, shredded chicken
  • 2 Tbsp. lime juice
  • 3 Tbsp. peanut butter
  • 3 Tbsp. low-sodium soy sauce
  • 3 tsp. honey
  • 2 tsp. fish sauce or Worcestershire sauce
  • 2 tsp. rice vinegar
  • 1 tsp. sriracha
  • 3 Tbsp. slivered almonds, toasted
Directions
  1. In a large bowl, combine cabbage, red cabbage, carrot, green onion, cilantro and chicken. In a small bowl, combine lime juice, peanut butter, soy sauce, honey, fish sauce, rice vinegar and sriracha. Whisk until smooth. Toss cabbage mixture with dressing. Garnish with almonds.
